2012 Cuvée Spéciale

Harmonious and textured

Champagne was arguably one of the greatest successes of the 2012 vintage.  An excellent year for the Champagne vineyards, which some may even compare with the mythical 1990, 1996 and 1947 vintages.

And yet climatic conditions seemed far from conducive to creating a great vintage such as this. In fact, a lengthy, brutal period of cold weather lasting until April, curtailed the onset of the growing period.  Heavy rain then struck the vineyard until 20th July. This said, sunny, well-balanced days leading up to the harvest ripened the berries to perfection. The grapes, although small this year, were picked in perfectly healthy condition and revealed pristine quality.

Blend and Elaboration :


60 crus, including a significant proportion of premier crus make up the blend of Cuvée Spéciale.  Harmoniously composed of 40% chardonnay to impart elegance and finesse, 40% pinot noir for roundness and structure and 20% meunier for fruit character.


Aged at least 3 years in our cellars, combined with a dosage of 8g/litre allows the remarkable refinement of this Champagne to truly shine.

 

Appearance:

Stunning clear gold, tinged with hints of light green, and a harmonious string of fine, delicate bubbles.

Nose:

Initially delivering subtle floral aromas of hawthorn, paving the way for richer, appealing aromas of ripe stone fruits such as apricot, white peaches and plums, which gradually transform into brioche and pastry notes. The wine opens up in the glass to reveal refreshing notes and a hint of mint or mandarin, even acacia or limeblossom, imparting finesse and complexity to the Champagne.

Palate:

The 2012 Cuvée Spéciale instantly enthrals with its richness and natural freshness underscored by the sensation of delicate, omnipresent bubbles. The wine gains in intensity and invades the palate with sweet texture, creating lovely rounded character. Concentrated on the palate, ripe fruit notes develop with elegance and in perfect harmony. The well-structured finish, together with a suggestion of flowers and a delectable saline note, makes the Cuvée Spéciale a delight with food.

Pure pleasure :

-Salmon tartare

-Veal escalope in sauce with crushed potatoes.

-Warm brioche and rhubarb compote.

Relaxing interlude :

-Crayfish tail salad. Red mullet fillet with fennel.

Luxury and glamour :

-Monkfish medallions with citrus fruit.

-Quail served with grapes and pureed parsnips in hazelnut oil.
